It is also known as ‘French Macaroon’. Macarons are so expensive because of the cost of ingredients and the time and expertise to make them.
Take 3 egg whites in a bowl at room temperature at least 30 minutes before you started
In the bowl of a food processor, combine dry ingredients.
1 ¾ cup of powdered sugar, 1 cup almond flour, 1 tsp salt process on low speed
Sift the dry ingredients through a sieve into a large bowl.
Take a large bowl and beat egg white with a pinch of salt. Gradually add ¼ cup of granulated sugar and continue to beat until stiff peaks form
Add ½ tsp vanilla extract and beat.
Add 2 drops of gel food coloring.
Combine this with dry ingredients. Mix well. Do not over mixing or under mixing.
Transfer the batter into a piping bag. pipe the macarons onto the parchment paper in 1½-inch (3-cm) circles.
Tap the baking sheet on a flat surface for releasing the air bubbles. Rest at room temperature for 30-60 minutes.
Preheat the oven to 300˚F (150˚C) and bake for 17 minutes.

Next, we need to make macaron filling buttercream.
Take a large bowl, add 2 sticks of unsalted butter, and beat it until light and fluffy.
Sift and add 3 cups of powdered sugar and beat it again. Add 1 tsp of vanilla extract and beat to combine.
Add 3-4 tbsp heavy cream gradually and beat to combine until it reaches the consistency.
Add buttercream to one macaron and top it with another one to create a sandwich. Repeat it to all macarons.
Wait at least 24 hours to eat macarons.
