Costco Lemon Cream Caramelized Croissant

There's a New Croissant at Costco, and Shoppers Are Already Talking About It

Costco’s Lemon Cream Caramelized Croissant is a new bakery item that layers flaky pastry with a glossy lemon filling, then bakes it until the outside turns caramelized, creamy and crisp. Fans are already enthusiastic.

If you can’t find it at your warehouse, you can make a very close version in a muffin tin using croissant dough or puff pastry, a tangy lemon cream cheese center, a buttery streusel and a layer of sugar that caramelizes underneath.

Bakery launches usually fade quickly, so why is this one getting attention? Part of the answer is that it takes a familiar idea and gives it a sharper, brighter flavor. Below you’ll find what makes it appealing, a full home recipe, and the reasoning behind the steps that matter most.

What Costco’s Lemon Cream Caramelized Croissant Actually Is

The pastry is built from layers of flaky dough, a lemon filling with a glossy finish, and a caramelized top and base. The result sits somewhere between a croissant and a baked dessert, with a crisp, sweet exterior around a creamy center.

Creator Laura Jayne Lamb, who runs the costcohotfinds Instagram account, shared it with her followers and called it “one of the best desserts the Costco bakery has ever done“. That is her opinion, of course, but it explains why the item is being talked about.

It also fits a pattern. The idea follows a bakery spinoff of the viral blueberry cheesecake croissant, so Costco is clearly building on a format that people already love.

Why a Lemon Version Makes Sense

Rich pastry and cream cheese can feel heavy without something to cut through them. Lemon does that job. The tang in the filling balances the buttery dough and the sweetness of the caramel. It is the same logic that makes lemon cheesecake so popular: creamy and bright at the same time.

Making Costco Style Lemon Cream Caramelized Croissants at Home

These home versions are inspired by the bakery item. They are a copycat approach, not Costco’s own formula. Everything bakes in a muffin pan, or in individual paper liners, so the shaping is simple.

Ingredients

For the base and crust

  • 1 package of croissant dough or puff pastry sheets
  • Granulated sugar, about 1 to 2 teaspoons per muffin well, for the caramelized bottom
  • Melted butter or nonstick spray for the pan or liners

For the lemon cream filling

  • 8 oz (1 block) cream cheese, softened to room temperature
  • ¼ cup powdered sugar, or granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest, from a large lemon
  • 1 large egg
  • 1 teaspoon vanilla extract

For the butter streusel topping

  • ¾ cup all purpose flour
  • ¼ cup granulated sugar
  • 3 tablespoons unsalted butter, cubed and chilled
  • A pinch of salt

Egg wash

  • 1 beaten egg, optional, for brushing the pastry edges

Step 1: Prepare the Pan and Sugar Base

Preheat your oven to 400°F (200°C). Spray a standard muffin tin with nonstick spray and brush it lightly with melted butter. Then sprinkle about 1 teaspoon of granulated sugar into the bottom of each well. This sugar is what becomes the caramel, so don’t skip it.

Step 2: Make the Streusel

In a small bowl, combine the flour, granulated sugar and salt. Add the cold cubed butter and work it in with your fingers or a pastry cutter until the mixture turns crumbly. Set it aside.

Step 3: Mix the Lemon Cream Filling

Start by rubbing the lemon zest and sugar together with your fingers. This releases the oils in the zest and gives the filling a stronger lemon flavor than stirring them in separately would. Add the softened cream cheese, egg, lemon juice and vanilla, then beat with a hand mixer for about 2 to 3 minutes, until the mixture is light, smooth and fluffy.

Step 4: Assemble the Pastries

Roll out or cut your croissant dough or puff pastry so it fits into the muffin wells with enough overhang to fold over the top. Spoon a generous portion of lemon cream into each pastry lined well. Sprinkle half of the streusel over the cream, then fold the corners of the pastry inward over the filling.

Step 5: Add the Egg Wash and Remaining Streusel

Brush the exposed folds with beaten egg, then top each pastry with the rest of the streusel. As the pastries bake, the sugar at the bottom of the tin melts and caramelizes against the crust.

Step 6: Bake and Cool

Bake for 15 to 18 minutes, until the pastry is deep golden brown and crisp. Let the croissants cool in the pan for about 5 minutes, then remove them carefully and finish cooling on a wire rack. This last part matters more than it looks. Cooling on a rack lets the caramel crust on the bottom harden slightly, which gives you that crisp base instead of a soft one.

Small Details That Change the Result

Several parts of the method exist for a reason, and knowing why helps if you want to adjust anything.

The cream cheese needs to be soft before mixing so the filling beats up smooth instead of lumpy. The butter in the streusel goes in chilled so it stays in small pieces and bakes into crumbs rather than melting into a paste. And the sugar in the bottom of the pan is what creates the caramelized finish that gives these pastries their name.

Have you ever pulled a pastry from the oven and found the bottom disappointingly soft? The sugar layer and the wire rack are the two things working against that here.

Frequently Asked Questions

Can I use puff pastry instead of croissant dough?

Yes. The recipe works with either croissant dough or puff pastry sheets, so use whichever you can find more easily.

Is this the exact recipe Costco uses?

No. This is a home version inspired by the bakery item and by recipes for its relative, the blueberry cheesecake croissant. It aims for the same flavors and textures, but it isn’t Costco’s own formula.

Do I have to use a muffin tin?

A muffin pan is the standard choice, but individual paper liners also work. Either way, the goal is to hold the pastry in a small, contained shape so the filling stays in the center and the sugar can caramelize at the bottom.

Is the egg wash necessary?

It is optional. It is brushed onto the exposed pastry folds, and it helps the edges brown. The filling itself still contains an egg either way.

Can I use granulated sugar in the filling instead of powdered sugar?

Yes. The filling can be made with either powdered or granulated sugar, so use whichever you have on hand.

How do I know when the croissants are done?

Look for a deep golden brown color and a crisp texture, which usually takes 15 to 18 minutes at 400°F (200°C). Give them about 5 minutes in the pan before moving them to a wire rack.

The Takeaway for Lemon and Pastry Lovers

Costco’s lemon cream version works because it pairs a rich, flaky pastry with something bright enough to keep it from feeling heavy. If your local bakery counter has it, it is worth trying for yourself. If it doesn’t, the home recipe above gets you most of the way there with ingredients that are easy to find, and the whole thing bakes in under 20 minutes.
