Prepare buttermilk,

Take 1 cup of milk and add 1 tsp of vinegar, keep aside for 5-7 minutes.

Prepare cupcake batter,

In a bowl Sieve add All-Purpose Flour – 1.5 cups,

Sugar – 1/2 cup,

Baking Powder – 1 Tsp,

Baking Soda – 1/2 Tsp,

A Pinch of Salt,

Add 1/2 cup oil and buttermilk mix them.

Add 1 tsp vanilla essence, 1 tsp lemon zest, 1 tbsp lemon juice, and yellow food color(optional)

Mix well.

Pour the batter into the cupcake mold.

Pour only 3/4.

Preheat the oven at 180C and bake the cupcakes for about 20-22 minutes.


Prepare lemon buttercream,

Take 225g butter at room temperature, beat it until it’s pale in color and light.

Add 4 cups sugar in total but add them in batches(1 to 2 tbsp at a time)

Once the frosting is light and fluffy add lemon juice – 1 tbsp, lemon zest – 1 tsp, yellow food color (optional)

Transfer the frosting to a piping bag and decorate the cupcake

top with cream
