Chocolate chip cookies are originated from the United States and then continuing their deliciousness worldwide.
Take a large bowl, sift all dry ingredients together. Set aside.
1 cup bread flour
¾ cup all-purpose flour
2 teaspoons kosher salt or 1½ teaspoon table salt
1 teaspoon baking soda
Melt 1 cup of butter over medium heat.
Remove the butter to a liquid measuring cup when it turns naughty brown.
Add 2-3 tbsp cold water to melted butter to bring it back up to 1 cup of liquid.
Let cool at room temperature.
Take a large bowl, add 1 cup dark brown sugar
½ cup white sugar
2 teaspoons vanilla extract
1 teaspoon espresso powder
1 cup cooled brown butter and mix well.
Add 1 egg and 1 egg yolk and beat until incorporated.
Add dry ingredients mixture and beat until incorporated.
Add ½ cup semisweet chocolate chips and chopped 5 ounces dark chocolate.
Scoop the cookies onto a parchment paper-lined baking sheet.

Move to parchment paper-line baking sheet.
Bake in a preheated oven for 12-14 minutes.
